Paleo Sweet Potato Casserole

Paleo Sweet Potato Casserole

I created this for our Easter Sunday, and it is already gone! If that's not reason enough to make it, think sweet potatoes meets candied pecans and you'll be convinced. Enjoy!

Ingredients

Sweet Potatoes:
3 cups sweet potatoes
1 cup maple sugar
2 eggs
1 teaspoon vanilla
1/4 cup almond milk
1/2 cup butter

Topping:
1 cup organic coconut sugar
1/3 cup almond flour
1 cup chopped pecans
1/2 cup butter, softened

Directions:

1. Peel and dice sweet potatoes, place in boiling water on the stove top
2. Once soft, mash the potatoes
3. Add all of the ingredients for the sweet potatoes together until well combined
4. Pour into 9 by 13 pan, grease with coconut oil or butter
5. Mix topping ingredients together and sprinkle over top of casserole
6. Bake for 30 minutes on 350 degrees until topping becomes crisp
