Easy Paleo Cupcakes

When I was first introduced to the paleo lifestyle, I thought easy and paleo couldn't exist in the same sentence. After further research and experimenting with different paleo products and recipes, I found the perfect pairing! Photography by Jayleigh Daniel.

Ingredients
 

Cake
Chocolate Cake and Muffin Mix by Simple Mills (click here to purchase)
1/3 cup water
1/3 cup coconut oil
1 tablespoon vanilla extract
1/3 cup organic coconut sugar

Frosting (from Juli's Bauer's Paleo Cookbook, click here to purchase)
1 cup unsalted sweet cream butter (I prefer KerryGold)
1 teaspoon vanilla extract
1 tablespoon full-fat coconut milk
1 cup organic powdered sugar

Topping
1/2 cup of Enjoy Life chocolate chips (click here to purchase)
2 tablespoons coconut oil
Sliced almonds
Optional: toasted coconut

Directions:
1. Preheat oven to 350 degrees
2. Whisk eggs, coconut oil, vanilla and water and coconut sugar in a medium sized bowl
3. When well-combined, add mix
4. Pour batter into greased or lined muffin tins, about 2/3 cup full
5. Bake for 15-20 minutes, until toothpick comes out clean
6. Place the softened butter in a stand mixer, mix until fluffy, about 5 minutes
7. Add vanilla and coconut milk until fully combined
8. Slowly add the powdered sugar , whip until combined
         Optional --> Add unsweetened cocoa powder for chocolate frosting
9. Once cupcakes have cooled, add frosting
10. Melt chocolate chips and coconut oil together, once combined, drizzle on top of cupcakes
11. Top with sliced almonds, toasted coconut, or whatever you choose!
